As autumn slowly sweeps through our lives, we are naturally drawn inside, to spend time within the safety and coziness of our homes. And with the air growing cooler every day, many of us think about finally turning our ovens back on and baking something tasty — perhaps to enjoy with a cup of spicy chai tea and a book perfectly suited for fall.
We’re all for getting adventurous in the kitchen with cinnamon rolls and apple cobbler, but sometimes the best thing to do is make an old classic with a small twist. Enter: oatmeal chocolate chip cookies.
With the perfect balance of texture and sweetness, you’ll be coming back to this incredibly simple yet delicious recipe.
The Ingredients:
2 sticks softened butter
2 eggs
1 cup brown sugar
1 cup granulated sugar
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 teaspoons vanilla extract
3 cups rolled oats
1 1/2 cups semisweet chocolate chips (or more — measure with your heart!)
For extra texture, may we suggest adding 1/2 cup of chopped pecans?
How to make Oatmeal Chocolate Chip Cookies:
Preheat the oven to 350°F and coat a baking sheet with cooking spray or parchment paper. Cream the butter, granulated sugar, and brown sugar until the mixture becomes fluffy. Beat in the eggs, then add the vanilla extract.
In another bowl, mix together the flour, baking powder, baking soda, and salt. Mix the dry ingredients into the wet ingredients gradually, until combined.
Next, add in the oats slowly. And lastly, fold in the chocolate chips.
Roll the cookies into dough balls and place onto the baking sheet. For larger, crisper cookies, flatten the dough down. Bake for 10-12 minutes, or until golden brown.
And, of course, enjoy with a piping cuppa!
